Surfnorm cubic fit plot

Hello community,
The function surfnorm says "After performing a bicubic fit of the data in the x, y, and z directions, diagonal vectors are computed and crossed to form the normal at each vertex."
I am wondering how I can plot the fitted curves to check if it was a correct shape in surfnorm. With this information, I can compare the normal with the real surface normals and the generated mesh-surfnorm normals.
An example top view:
For instance the normals from the surfnorm on such a mesh do not seem to be convenient, that's why I want to compare the results.

I dont see a surface?
One thing to keep in mind is that you might need to explicitly tell matlab to have equal scales in all three (two in your plot?) directions:
axis equal
