Suppose in this case you want origin at y(3)
y= [1,5,8,3,9];
n = 3;
x = -(n-1):numel(y)-n; % or x = (0:numel(y)-1)-n+1;
plot(x, y);

By default, the plot starts y(1) at x=1. If you want to start y(3) at x=0, then you need to move y(1) to -2. This is happening in the above code.
