Two-dimensional matrix fitting

I have a 100x100 matrix, which contains 10,000 value

Use imagec drawing as follows

I want to find a polynomial used to represent this surfaces

Seems the "sftool" command?

Then I enter this command appear:

Warning: SFTOOL will be removed in a future release. Use CFTOOL instead.

How can i reach my goal? thanks!

Why not use CFTOOL as the warning recommends?
