Matlab Arduino: using the timer function in matlab to find a frequency

I am currently coding a pressure sensor to take a "ping" whenever the pressure exceeds a certain limit and I would like to take a ping/second for the output. I was thinking about using a timer to do this by having the time between pings be saved to an array that would be averaged out. The problem is that I really dont have a clue on how to use the matlab timers and the online documentation I've found has been confusing at best. How would I go about doing this in matlab?
