Calculate intensity of image with previously segmented ROI information

Hello, I previously segmented an image into ROIs based on the fluorescence in one channel. Now I would like to calculate the intensity of a different signal (another channel) within those same ROIs.
For 183 ROIs, I have a 183x1 cell array 'cell_per' containing 183 double-precision arrays that are all nx2, denoting the pixel coordinates of the outline of each ROI.

Did you ever find the answer for this? I'm having a similar issue applying ROIs through a stack of TIFF files and reading the intensity of each point through the stack.
