How to have a script to continuously execute another function after certain time ?

I am working with EEG recording device along with some visual stimulus. I have to start recording the EEG once the visual stimulus starts (after 4-5 seconds). How do I make this happen ? I got to know about callback function, parfor but I have no progress. I haven't been able to use it properly. Anyone working in it please any help is greatly appreciated.
