How can I create a surface plot using the data from 1x100 doubles?

I am trying to create a surface plot using the 3 different data sets as the parameters. However, I am not sure exactly how to create the Z component of the surface.

You probably need to use either griddata() or scatteredInterpolant() to build the 2D array of data to surf()
