Coordinate conversion in matlab

I have two columns X,Y which are map coordinates type (30°24'20,7''N) in my table and I want to convert them to plan coordinates

This does not contain enough information. 1. Which type does the input have? Please post an example in valid Matlab syntax. 2. There are different methods to project spherical positions to a planar coordinate system.
