Getting color intensity values

I'm trying to get color values for single points that I can then use to plot these points in sort of a "intensity scatter plot"
I would ideally like to set the caxis limits using my dataset min/max, then loop through the data and get RGB values for every point, that I could then use for the scatter plot.
Anyone know of any function that exists to do this?

Single points of what? Of an image? Of an array?
Do you mean "intensity" in the sense of luminance, or in the sense of point density ?

I did make my own MATLAB-only 3D color gamut scatterplot but it's very slow and not as good as the ImageJ version. If you really want that, let me know.
