how to convert output encoder in step into RPM using simulink?

I have working with arduino and simulink to analyzed speed of servo motor. i use one channel encoder to read the rotation of motor. The result I got is the in step which is ON and OFF encoder. How to convert it into RPM. Type of encoder I used is http://www.mybotic.com.my/products/Rotary-Encoder-Kit/115
