How can I interpolate geographic data?

I have GPS data that is not taken at set time intervals. I am trying to interpolate Lat's and Lon's so that I have a data sample every second (right now they are somewhere between ever 13-17 seconds). My data is not monotonic. Thanks in advance!

In the latest release (R2017a) there is a "geointerp" function that may help.
