Averaging across subjects EEG

Hello everyone,
I currently have the following problem. In order to visualise event related potentials (ERP) I have segmented my EEG data. The problem I have now is that I know I have to average the segments to get to the ERP. However, I am unsure if my approach is correct. My segments are 5s long and I have 30 segments for each EEG channel. My approach was as follows: 1. average each individual segment for all channels by using the matlab function mean, so with 8 channels and 30 segments I would have 240 average values. I would like to do it like in the figure I have attached but I think my approach is wrong. I would appreciate any tips and help.

I do not know what your approach is.
My approach in Combining repetitive curves into one average curve would likely work with your signals, with necessary modifications.
