Plot data in Earth 3D axes.

I have data, as a function of latitude and height with the data curving as a function of longitude, I would like to plot something similar, I tried plotting the longitude as z-axis and rotating the coordinates, but then none of the geobasemaps seem to work, except coastlines.mat. But coastlines does not have any information within countries so if I zoom in ,the surface looks blank.
