how to execute Toolbar Buttons programmatically

Dear all,

I would like to execute a function which is called when pressing a Matlab toolbar button within a programm.

In particular I want to use the feature "Collapsa All" (Editor > View > Code Folding) see here, but do not know which function the Toolbar Button calls.

Is there a way to find out, which function is linked to a Toolbar Button?
