I have a cloud of 3D points(X,Y,Z), I wan to fit a ellipsoid to them which has a minimum volume , how could do I this in MATLAB?

Look on the file exchange. For example, here:
Minimum volume ellipsoid tool
I don't know if it works, or how well, but you might take a look.
