デフォルトの LineWidth プロパティは、graphics オブジェクトのルートにある 'DefaultLineLineWidth' で設定することができます。新しい線が描画されたとき、このプロパティはルートオブジェクトの設定を呼び出します。
set(0, 'DefaultLineLineWidth', 2);
