The Mapping Toolbox imports and exports generic GIS data in several formats, including shapefile, TIFF/JPEG/PNG with work files, GeoTIFF (read only), and ARC ASCII Grid (read only) and it imports from various more specialized formats (DTED, USGS DEM, SDTS DEM, etc.).
