Use the plot() function, the xlabel() and ylabel() functions, the text() function, and the legend() function.

NAS, not sure what your edit was. I think you should have been able to figure it out over the past month, but in case you weren't able to, here is a start:
x = [0, 1.5];
dynamicPressure = [0, 0];
hydrostaticPressure = [100000, 120000];
totalPressure = dynamicPressure + hydrostaticPressure;
plot(x, dynamicPressure, 'r-', 'LineWidth', 2);
ylim([-20000, 120000]);
grid on;
hold on;
plot(x, hydrostaticPressure, 'g-', 'LineWidth', 2);
plot(x, hydrostaticPressure, 'b-', 'LineWidth', 2);
fontSize = 22;
xlabel('z', 'FontSize', fontSize);
ylabel('pressure', 'FontSize', fontSize);
legend('Dynamic Pressure', 'Hydrostatic Pressure', 'Total Pressure', 'Location', 'east');
