Save data from sensor

Hallo,
I need help by some Matlab Basics:
The overall goal is to calibrate a sensor in this way that the surrounding is not visible at the signal. It should be just detected the object of intrest.
The senosr signal is availabe in matrix format.
My idea is to make a "Zero Measurement" and save it as reference. This "Zero Measurment" should be subtracted from the measurement with the object of intrest.
Theoretically it should work but I do not know how I should implement it!
Do you have some ideas how to implement it ?
