How to plot surface after saving from a function?

I have a function [plot] = SurfacePlot(file), it takes an input file and outputs the plot
Plot is saved as plot = surf(X,Y,Z)
In my main code I save a variable to the function so the variable takes on the value of plot.
After I modify the plot, the variable shows it has all of the data however I don't understand how to make it show the plot rather than its attributes. Normally I have everything in one long line of code and I would call surf(X,Y,Z), modify it's properties and don't use any saving however I want to collect multiple plots and make this much cleaner.
