How can I plot boundary of India?

How can I plot boundary of India with lat values -10 to 40 and lon value 40 to 100, on a contour plot of temperature?

If you have the mapping toolbox then you can use the worldmap function:

If you don't, then you can plot your boundaries as a regular plot. How easy that is will depend on the format of your data.

Another option is to use borders, which plots political boundaries with or without Matlab' Mapping Toolbox.
