Hi. I have a surface defined as a fsurf plot. How can I extract the X,Y,Z coordinates of the points of the surface?

How do you want to specify them and what information do you have? Did you keep the handle to the fsurf object? Do you want to click on it or get values programmatically?

You can see how the x,y and z coordinates were extracted in this posted quesstion: https://www.mathworks.com/matlabcentral/answers/783766-is-there-a-way-to-adaptively-sample-2-d-surfaces?s_tid=srchtitle

Have you tried the following?
fs=fsurf(funx,funy,funz);
X=fs.XData;
Y=fs.YData;
Z=fs.ZData;
