Interpolation data (complicated)

COMPLICATED (I don't even know if this is possible)
1) I've a data set of X,Y,Z,temperature values of a cylinder for its temperature.
2) Slice taken perpendicular to the 'Z' axis.(Shown in image)
3) X,Y data is plotted, Currently (deltaY is 2 mm)
QUESTION) Is there any way to interpolate mathematically and get more data between these slices? (Let's say 1 mm or 0.5 mm)

There are several interpolation techniques for 3D data, I'm sure your favorite internet search engine should help you find some examples.
The question is the same as with your other question: what shape is your data and what do you want with it? Is it a 3D matrix with measured values?

The data is a 2D slice image of cylinder. It's not a 3D matrix

Now I'm confused. If you only have a single 2D image, how exactly do you have X,Y,Z data?
