Granular (or particle) segregation analysis using Image processing / segmentation

Hi, I will be studying granular segregation, using plastic particles of two sizes, 1/8" and 1/4", mixed with fluid. To study the effects of fluids on granular segregation, I am intending to take images after the particles have been agitated and settled down in a squared container.
I am wondering if it would be possible to use Matlab, to process the images taken from front view. In that, I am looking to see if Matlab is able to identify distinctively between both the sizes, and be able to provide me with an analysis. For example, segregation would have occurred if the image taken shows all the large particles residing at the bottom of the image - if would have to be transferred into meaningful dataset (for instance, graphs) for analysis.
I came across 'Image Processing' on Matlab and on Youtube, and noticed that it is possible to process the image. However, in my case, the particles will be opaque-transparent, and be clustered together (as what we see in cornflakes).
