I have vector field in 3d and the equation of the vector is x+y+z=1 it is in the sym form.
And want it to be like z=1-y-z to parametrize it.
How can I do it?

You can use quiver3() fcn of MATLAB - see DOC.
And write a simple code, e.g.:
[X,Y] = meshgrid(-1:0.1:1,-2:0.2:2);
Z = 1-X-Y;
[U,V,W] = surfnorm(Z);
quiver3(X,Y, Z, U,V, W);
