Computing structure tensor and Gram matrix from three 3D matrices

I have Three 3D matrices X,Y,Z . the size of three matrices is same and 7*7*3. How can I compute structure tensor and Gram matrices from this three matrices? I read this links

But I couldn't use them to solve my problems. Could any one help me please?
