What voltage value that corresponds SOC = 1 ?

The SOC is calculated as follows (see Battery documentation in SimPowerSystems):
where i is the current flowing through the battery. if the SOC is 1, it means that the integral of the current with respect to that point in time is equal tot the maximum charge of the battery. The voltage will depend on what the battery is connected to.

Ok! I think that if nominal voltage V=12V the SOC=1, but no...
So, one battery with nominal voltage V=12V, wich output voltage that can achieve?

maximum 14V otherwise it explose :)
