Question about contour and quiver in 3-D plane

Dear all,

I know that contour and quiver can plot beautiful figures when I have grid points and values in X-Y plane:

Now my question is: If I have grid points and values defined in a 3-D plane, how to let matlab also plot similar figures? Is there any similar matlab functions?
